Gluten Free Banana Muffins

This is a simple, never fail, one bowl wonder.


Makes 12 large muffins


Prep time: 5 minutes

Cooking time: 35 minutes


Ingredients:

  • 3 bananas

  • 1/3 cup olive oil

  • 1/3 cup honey or sugar

  • 3 eggs

  • 1 teaspoon vanilla essence

  • 2 cups (200 g) almond meal

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1 tablespoon flaxseeds or chia seeds

  • 1/2 cup chopped dates or chocolate chips

Method:

  1. Preheat oven to 170 C and prepare cupcake tray (also works as a banana loaf)

  2. In a large mixing bowl, mash bananas

  3. Add olive oil and honey or sugar and mix well

  4. Add eggs and mix until well combine

  5. Add almond meal, baking powder and cinnamon and mix well

  6. Add seeds and dates or chocolate chips and mix until even stirred through

  7. Spoon into prepared try and bake for 30-35 minutes until golden on top. If making as a banana loaf instead of muffins, allow 45-50 minutes and bake on the middle shelf or cover with foil part way through if too much browning on top.

  8. Allow to cool for 10 minutes in tray and then transfer to a cooling rack or enjoy while still warm (being careful to check the chocolate chips have cooled enough if used!)
